Description of research relevant to the action : 

I am Nutritionist and Food Technologist and I have a Master of Science in Food Science and Engineering, and at present I have started my PhD fellowship at the Polytechnic University of Valencia focused on the development of the most suitable methodology for food in vitro digestions under different experimental and environmental conditions, aimed at the generation of knowledge in the factors affecting effectiveness of the enzymatic supplementation therapy in Cystic Fibrosis (CF) patients.

In the field of the applied research, I have a thorough experience in dietetic management and follow up of patients diagnosed CF as well as technical expertise in food in vitro digestions and adjustment of the pancreatic enzyme replacement therapy (PERT). Recently I have finished my Master Thesis entitled "Influence of the duodenal pH on fats digestibility: an in vitro simulation of the digestion in patients with pancreatic insufficiency".

I am very interested in the Training School because I am eager to learn the possibilities that gastro intestinal engineering will bring to the development of fortified/enriched and functional food for CF's patients as well as to decipher the enzymatic mechanism underlying in vitro digestions for my PhD training.
