Description of research relevant to the action : 

My research program is centered on quantitative approaches to describe material transport, breakdown, and absorption in the digestive system in order to improve food safety, increase consumer health benefits, and optimize post-harvest and food processing operations. This includes a detailed characterization of food functional properties in relation to food structure (both macro- and micro-level structure) as well as characterizing their behavior after ingestion.
