Description of research relevant to the action : 

 

Research lines

 

1. Production and application of probiotic lactic acid bacteria and bacteriocins for use in animal feed and active packages. 

2. Production, purification, chemical and functional characterization and application of microbial amylases, proteases and lipases particularly focused on thermophylic microorganisms. 

3. Development of new feed and food products and ingredients from sub products of the food industry and improvement of their safety (effect of heat and organic acid combined treatments to hygienize foodstuffs). 

4. Development of analytical tools for assay biological activities of bioactive molecules including bioassays. 

5. Development of intelligent nanodevices based on hydrogels to control the release of food preservatives in active packaging. 

 

In the last years, several procedures to improve and optimize the production of bacteriocins as well as other biomolecules has been developed, patented and licensed. In addition the team has performed trials with different farm animals to demonstrate the functionality of different new formulations of animal feed including enzymes, lactic acid bacteria and short chain organic acid. Finally, the team has elucidated the relation of structure and function and crystallization and resolution of the 3D structure of a microbial lipase, research that currently is being extended to a new thermophilic esterase. In relation with the above mentioned expertise the author possesses more than one hundred of scientific contributions (including SCI papers, books and patents).
