Research project "Formation of microstructure and physical properties of microcapsules containing bio-oils" - objectives:


 •to get characteristics of chemical and physical properties
  of oils to be encapsulated,


• to optimise emulsion composition with regard to:
  - max emulsion stability,
  - min average droplet size (<1 mm) and/or narrow droplet size distribution,
  - min surface oil content (max encapsulation yield).

• to choose /decide
  - homogenisation method and its parameters,
  - spray drying conditions,
  - agglomeration technique and conditions,

•  to assess the microcapsules' internal structure in relation
   to emulsion structure / droplet size distribution,

• to evaluate efficacy of oil encapsulation and bioactive compounds protection.
